Vegan Thai Cashew Stir-fry with Tofu

 


Hi there!  So I have to admit, I knew nothing about Thai food until about 1 year ago.  Ever since then, I've been hooked!  Particularly on this cashew stir-fry dish.  I don't know, in my mind, Thai food and Mexican food were spicy and I'm not really a fan of spicy dishes. So I steered clear of them.  Well, low and behold, who knew! Lol!

  **Cook Time:**  (Approximately 20-25 minutes, including marinating time).

 


 

 **Ingredients:**                                                                                                       

*For the Thai Cashew Stir-Fry:*
- 1 block of triangle tofu (approx. 14 oz), cubed
- 1 cup broccoli florets
- 1 bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup snap peas, ends trimmed
- 1/2 cup roasted cashews
- 2 tablespoons sesame oil
- 3 tablespoons soy sauce or tamari
- 2 tablespoons agave or maple syrup
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- Red pepper flakes (optional, for heat)
- Fresh cilantro and lime wedges for garnish

*For the Triangle Tofu Marinade:*
- 3 tablespoons soy sauce or tamari
- 1 tablespoon sesame oil
- 1 tablespoon maple syrup
- 1 teaspoon cornstarch

**Instructions:**

1. **Prepare the Triangle Tofu:**
   - In a bowl, whisk together the marinade ingredients. Coat the triangle tofu cubes with the marinade and set aside to marinate for at least 15 minutes.

2. **Sauté the Triangle Tofu:**
   - In a large skillet or wok, heat 2 tablespoons of sesame oil over medium-high heat. Add the marinated triangle tofu and cook until golden brown on all sides. Remove from the pan and set aside.

3. **Prepare the Stir-Fry Sauce:**
   - In a small bowl, whisk together soy sauce (or tamari), agave or maple syrup, rice vinegar, and cornstarch. Set aside.

4. **Stir-Fry the Vegetables:**
   - In the same skillet, add a bit more sesame oil if needed. Sauté garlic and ginger until fragrant. Add broccoli, bell pepper, carrot, and snap peas. Stir-fry until the vegetables are crisp-tender.

5. **Combine and Cook:**
   - Return the cooked triangle tofu to the pan. Pour the stir-fry sauce over the tofu and vegetables. Toss everything together until well-coated and heated through.

6. **Add the Finishing Touch:**
   - Stir in roasted cashews for an extra crunch. If you like it spicy, sprinkle red pepper flakes to taste.

7. **Garnish and Serve:**
   - Garnish the Thai Cashew Stir-Fry with fresh cilantro and serve with lime wedges for a burst of citrusy flavor.  Serve over rice.  Enjoy my friends!
