Vegan Stuffed Mushrooms

- 2 garlic cloves, minced  

- ¼ cup red bell pepper, finely diced  

- 2 tablespoons fresh parsley, chopped  

- ½ teaspoon Italian seasoning  

- ¼ teaspoon smoked paprika  

- Salt and pepper, to taste

**Instructions**  

1. **Prepare the Mushrooms:**  

   - Preheat your oven to 375°F (190°C).  

   - Clean the mushrooms gently with a damp cloth and remove the stems. Brush the caps lightly with olive oil and place them on a lined baking sheet.  


2. **Make the Filling:**  

   - In a medium-sized bowl, mix the vegan mozzarella, bread crumbs, spinach, garlic, red bell pepper, parsley, Italian seasoning, smoked paprika, salt, and pepper. Stir until the mixture is well combined.  


3. **Stuff the Mushrooms:**  

   - Spoon the filling into the mushroom caps, pressing gently to pack it in. Make sure each cap is generously stuffed.  


4. **Bake:**  

   - Place the mushrooms in the preheated oven and bake for 18-20 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.  


5. **Serve:**  

   - Let the mushrooms cool for a few minutes before serving. Garnish with extra parsley or a sprinkle of Italian seasoning for a polished finish.
