Coastal Delight: Vegan Cauliflower Fish Tacos

Hey there, peeps! Today, we're bringing a taste of the coast to your kitchen with a twist—Vegan Cauliflower Fish Tacos! These tacos are bursting with flavor, featuring crispy cauliflower florets, seasoned with kelp flakes, coated in a crunchy flour and cornmeal mixture, and nestled in warm tortillas with fresh veggies and zesty tartar sauce. 

So, I have to admit, I never really had fish tacos before going vegan, lol.  I did enjoy fish occasionally though. But these babies right here will give you what you're looking for.  These should please your palette of your fish cravings!   So, gather your ingredients, heat up that skillet, and let's create a coastal feast that'll transport you straight to sea!  Let's go.........



**Ingredients:**

- For the Cauliflower "Fish":
  - 1 small head cauliflower, cut into florets
  - 1 cup all-purpose flour
  - 1/2 cup cornmeal
  - 2 tablespoons kelp flakes
  - 1 teaspoon garlic powder
  - 1/2 teaspoon paprika
  - 1/2 teaspoon salt
  - 1/4 teaspoon black pepper
  - Juice of 1 lemon
  - 2 tablespoons soy sauce or tamari
  - Vegetable oil, for frying

- For the Toppings:
  - 8 small tortillas (corn or flour)
  - 1 cup shredded cabbage or lettuce
  - 1 avocado, sliced
  - 1/2 cup diced tomatoes
  - 1/4 cup chopped cilantro
  - Lime wedges, for serving

- For the Tartar Sauce:
  - 1/2 cup vegan mayo
  - 2 tablespoons finely chopped pickles or relish
  - 1 tablespoon lemon juice
  - 1 teaspoon Dijon mustard
  - 1/2 teaspoon garlic powder
  - Salt and pepper to taste

**Instructions:**

1. **Prepare the Cauliflower "Fish":**
   - In a large bowl, combine the flour, cornmeal, kelp flakes, garlic powder, paprika, salt, and black pepper.
   - In another bowl, whisk together the lemon juice and soy sauce.
   - Dip each cauliflower floret into the lemon-soy mixture, then coat evenly with the flour-cornmeal mixture.

2. **Fry the Cauliflower "Fish":**
   - Heat vegetable oil in a skillet over medium heat.
   - Carefully place the breaded cauliflower florets in the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and set aside on a paper towel-lined plate to drain excess oil.

3. **Prepare the Tartar Sauce:**
   - In a small bowl, mix together the vegan mayo, chopped pickles or relish, chopped capers, lemon juice, Dijon mustard, garlic powder, salt, and pepper to make the tartar sauce. Adjust the seasonings to taste.

4. **Assemble the Tacos:**
   - Warm the tortillas in a dry skillet or microwave.
   - Place a spoonful of shredded cabbage or lettuce onto each tortilla.
   - Top with a few pieces of crispy cauliflower "fish", sliced avocado, diced tomatoes, and chopped cilantro.
   - Drizzle with the tangy tartar sauce and garnish with lime wedges.

5. **Serve and Enjoy:**
   - Serve the vegan cauliflower fish tacos immediately, with extra sauce on the side for dipping, and enjoy the fresh flavors of the coast!
