Vegan Dumplings for Soup

These soft and fluffy vegan dumplings are perfect! 😋 They’re light yet hearty, made with simple ingredients, and soak up all the delicious flavors of the broth. Whether you're making a classic vegetable soup or a rich, savory stew, these dumplings add the perfect touch of coziness! Let's dive in.....🍲


Ingredients

For the Dumplings:

  • 1 cup all-purpose flour (or whole wheat for a heartier texture)

  • 1 ½ tsp baking powder (makes them fluffy!)

  • ½ tsp salt

  • ½ tsp garlic powder (optional, for extra flavor)

  • 2 tbsp chopped fresh parsley (or 1 tsp dried)

  • ½ cup unsweetened plant-based milk (soy, almond, or oat)

  • 1 tbsp olive oil or melted vegan butter

For the Soup:

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 1 medium zucchini, diced (optional)

  • 4 cups vegetable broth

  • 1 tsp thyme

  • 1 tsp rosemary

  • ½ tsp black pepper

  • 1 can (15 oz) chickpeas or white beans, drained (for protein)

  • 1 cup of vegetables (whatever veggies you like) 


Instructions

Step 1: Make the Soup Base

  1. Heat olive oil in a large pot over medium heat.

  2. Add onions, garlic, carrots, and celery, and sauté for 5 minutes until softened.

  3. Pour in vegetable broth, then stir in thyme, rosemary, black pepper, and chickpeas and whatever veggies you choose. Bring to a gentle simmer while making the dumplings.

Step 2: Prepare the Dumplings

  1. In a bowl, whisk together flour, baking powder, salt, garlic powder, and parsley.

  2. Pour in plant-based milk and olive oil, then mix gently until a thick, slightly sticky dough forms. Do not overmix!

Step 3: Cook the Dumplings

  1. Reduce soup heat to low so it’s simmering (not boiling).

  2. Use a spoon to drop small scoops of dumpling dough (about 1 tbsp each) into the soup. They will expand as they cook!

  3. Cover the pot with a lid and let the dumplings steam for 12-15 minutes, or until they are puffy and cooked through.

Step 4: Finish & Serve

  1. Taste and adjust seasoning if needed. Serve hot and enjoy!
