**Ingredients:**

*For the Shortbread Base:*

- 1 ½ cups almond flour

- ¼ cup coconut oil (melted) or any neutral oil

- ¼ cup maple syrup

- 1 tsp vanilla extract

- A pinch of salt


*For the Caramel Layer:*

- ½ cup almond butter (or any nut butter)

- ¼ cup maple syrup

- 1 tbsp melted coconut oil (or another neutral oil)

- 1 tsp vanilla extract

- 1 tbsp plant-based milk (almond, oat, or soy) to thin, if needed

- A pinch of salt


*For the Chocolate Coating:*

- 1 ½ cups vegan chocolate chips

- 1 tbsp coconut oil (or any neutral oil)


**Instructions:**

**Cook Time:**( - Prep Time: 15 minutes; - Baking Time: 10-12 minutes; - Freezing Time: 20-30 minutes; - Total Time: About 1 hour)

1. **Prepare the Shortbread Layer:**

   - Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.

   - In a medium bowl, mix the almond flour, melted coconut oil, maple syrup, vanilla extract, and a pinch of salt until a dough forms.

   - Press the dough evenly into the lined baking dish and bake for 10-12 minutes, until golden and firm. Let the base cool completely.


2. **Make the Caramel Layer:**

   - In a bowl, mix the almond butter, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt until smooth. If the caramel is too thick, add 1 tbsp of plant-based milk to get a spreadable consistency.

   - Spread the caramel evenly over the cooled shortbread base. Freeze for about 20-30 minutes until set.


3. **Coat with Chocolate:**

   - While the caramel sets, melt the chocolate chips and coconut oil in a double boiler or microwave, stirring frequently until smooth.

   - Remove the bars from the freezer and cut them into rectangular Twix-shaped bars.

   - Dip each bar into the melted chocolate, ensuring it's fully coated, then place them on a parchment-lined tray. Refrigerate the bars for 15-20 minutes to let the chocolate set.
