Vegan Cauliflower and Cashew Bake with Sweet Smoky Sauce

**Ingredients:**
- 1 large cauliflower, cut into bite-sized florets
- 1 cup raw cashews
- 2 tbsp olive oil (for coating cauliflower)
 
**For the Sweet Smoky Sauce:**
- ¼ cup BBQ sauce
- 2 tbsp maple syrup or agave nectar
- 1 tbsp soy sauce
- 1 tbsp liquid smoke
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp chili powder
- 1 tbsp apple cider vinegar
- 2 tbsp water (to thin the sauce)
  

**Instructions:**

1. **Preheat the oven** to 400°F (200°C).

2. **Prepare the Cauliflower:**
   - Toss the cauliflower florets in olive oil and spread them evenly on a baking sheet.
   - Roast in the preheated oven for 20-25 minutes until the cauliflower is tender and golden brown on the edges.

3. **Prepare the Sweet Smoky Sauce:**
   - While the cauliflower is roasting, whisk together the BBQ sauce, maple syrup, soy sauce, liquid smoke, smoked paprika, garlic powder, chili powder, apple cider vinegar, and water in a bowl until smooth.

4. **Add Cashews and Sauce:**
   - After the cauliflower has baked, remove the tray from the oven.
   - Add the raw cashews to the cauliflower and toss gently.
   - Drizzle the sweet smoky sauce over the cauliflower and cashews, coating everything well.

5. **Final Bake:**
   - Return the tray to the oven for another 5-7 minutes to allow the sauce to caramelize slightly and the cashews to toast.

6. **Serve and Enjoy:**
   - Remove from the oven and serve hot. Garnish with some parsley
