Summer Series: Delightful Vegan Vanilla Nice Cream

I love anything vanilla!😋  So, I could not wait to make this sweet sensational treat.  Vanilla nice cream is creamy, refreshing, and super easy to make. It's perfect for a sweet treat on a hot day or whenever you're craving something cool and delightful. It's easy to make, requires minimal ingredients, and can be customized with your favorite toppings. **Ingredients:**     (**Total Prep Time:** 10 minutes (plus freezing time for bananas)

- 4 ripe bananas, sliced and frozen
- 1/4 cup unsweetened almond milk (or any plant-based milk)
- 2 teaspoons pure vanilla extract
- 1-2 tablespoons maple syrup or agave nectar (optional, for extra sweetness)

**Optional Toppings:**
- Fresh fruit (berries, sliced bananas, etc.)
- Chopped nuts (almonds, walnuts, etc.)
- Vegan chocolate chips
- Coconut flakes
- Granola

**Instructions:**

**1. Freeze the Bananas:**
1. Peel and slice the ripe bananas.
2. Place the banana slices in a single layer on a baking sheet lined with parchment paper.
3. Freeze for at least 2-3 hours, or until completely frozen (overnight works great too).

**2. Blend the Bananas:**
1. In a high-speed blender or food processor, add the frozen banana slices.
2. Blend until the bananas break down into small pieces. You may need to stop and scrape down the sides a few times.

**3. Add the Almond Milk and Vanilla:**
1. Gradually add the almond milk, one tablespoon at a time, while continuing to blend. This helps achieve a creamy texture.
2. Add the vanilla extract and blend until smooth and creamy. If desired, add maple syrup or agave nectar for extra sweetness.

**4. Serve:**
1. Once the nice cream reaches a soft-serve consistency, scoop it into bowls.

**5. Add Toppings:**
1. Top with your favorite toppings, such as fresh fruit, chopped nuts, vegan chocolate chips, coconut flakes, or granola.

**6. Enjoy:**
1. Serve immediately for a soft-serve texture, or transfer to a container and freeze for 1-2 hours for a firmer texture.
