Simple, Nourishing Vegan Protein Lentil Wrap

 

Hey there, my friends! Welcome back to my kitchen, where we're whipping up some delicious and nutritious vegan creations. Today, I'm thrilled to share one of my favorite recipes—Vegan Lentil Wrap! With this Vegan Lentil Wrap, you'll be treating yourself to a satisfying and nourishing meal that's bursting with flavor and goodness. This wrap is packed with protein-rich lentils, crisp cucumbers, juicy tomatoes, and topped with a creamy tazatziki sauce, all wrapped up in a wholesome seeded wrap. So, let's get cooking and indulge in some wholesome goodness! Let's go........

**Ingredients:**

- 1 cup cooked brown lentils

- 1 cucumber, thinly sliced

- 1 tomato, thinly sliced

- 4 seeded wraps

- For the Tzatziki Sauce:

  - 1/2 cup vegan yogurt

  - 1/4 cup grated cucumber

  - 1 tablespoon lemon juice

  - 1 tablespoon fresh dill, chopped

  - 1 clove garlic, minced

  - Salt and pepper to taste

-optional add ons avocado, red onion, or greens (whatever you desire)


**Instructions:**            (**Cook Time:** Approximately 20-25 minutes (includes lentil cooking time)

1. **Prepare the Lentils:**

   - Cook the brown lentils according to package instructions until tender. Drain any excess water and set aside to cool.


2. **Make the Tzatziki Sauce:**

   - In a small bowl, combine the vegan yogurt, grated cucumber, lemon juice, chopped dill, minced garlic, salt, and pepper. Mix well to combine. Taste and adjust seasonings as needed. Set aside.


3. **Assemble the Wraps:**

   - Lay out the seeded wraps on a clean work surface.

   - Spread a generous dollop of tzatziki sauce onto each wrap, leaving a border around the edges.

   - Divide the cooked brown lentils evenly among the wraps, spreading them out in a line down the center of each wrap.

   - Top the lentils with slices of cucumber and tomato.


4. **Wrap 'Em Up:**

   - Fold the sides of each wrap towards the center, then roll them up tightly from the bottom to create a snug wrap.


5. **Serve and Enjoy:**

   - Slice the wraps in half diagonally and serve immediately. Or, wrap them tightly in parchment paper or foil for a portable meal on the go!
