Soulful Vegan Boil: Baked with Love and Flavor

This hearty dish is a celebration of flavor and wholesomeness, packed with colorful veggies, savory vegan sausage, and a richly seasoned broth. With this soulful Vegan Boil, you'll be treating yourself to a nourishing and comforting meal that's perfect for any occasion.  And guess what? **Ingredients:**

- 4 large potatoes, chopped into chunks

- 1 head of broccoli, cut into florets

- 2 large carrots, sliced

- 4 ears of corn, each cut into 3-4 pieces

- 4 vegan sausages, sliced (such as seitan or plant-based sausage)

- baby bella mushrooms, optional 

- 1 onion, sliced

- 1 bell pepper, sliced

- 2 tablespoons vegan butter

- 1/2 cup vegetable broth

- salt and pepper to taste

-Old bay seasoning or Cajun seasoning for extra flavor

- garlic and onion powder to taste


  **Instructions:**                                           (**Cook Time:** Approximately 20-25 minutes)

1. **Preheat the Oven:**

   - Preheat your oven to 375°F (190°C).


2. **Lightly Saute the Ingredients:**

   - In a large skillet, heat a tablespoon of vegan butter over medium heat. Add the chopped potatoes, broccoli florets, sliced carrots, corn pieces, vegan sausage slices, onion, and bell pepper. Lightly saute for about 5 minutes, stirring occasionally, until the vegetables are slightly tender and the flavors begin to meld.


3. **Season the Boil:**

   - Season the sauteed ingredients with salt, pepper, garlic, onion powder and any additional seasoning of your choice, such as Old Bay or Cajun seasoning. Toss gently to coat.


4. **Transfer to Baking Dish:**

   - Grease a large baking dish with the remaining vegan butter. Transfer the sauteed vegetables and sausage to the baking dish, spreading them out evenly.


5. **Add Vegetable Broth:**

   - Pour the vegetable broth over the vegetables in the baking dish. This will help keep everything moist and flavorful as it bakes.


6. **Bake to Perfection:**

   - Cover the baking dish with foil and place it in the preheated oven. Bake for 20-25 minutes, or until the vegetables are fork-tender and the flavors have melded together beautifully.


7. **Serve and Enjoy:**

   - Once baked to perfection, remove the foil from the baking dish and serve your Soulful Vegan Boil hot, straight from the oven. Dive in and savor every delicious bite!
