**Cook Time:**(Approximately 25-30 minutes for baking the cauliflower and chickpeas)

 **Ingredients:**

*For the Crispy Baked Cauliflower and Chickpeas:*

- 1 head cauliflower, cut into florets
 -1 can (15 oz) chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 tablespoon taco seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
 
                                                             *For the Zesty Yogurt-Lemon Sauce:*
  • 1/2 cup vegan mayo
  • 1/2 cup vegan yogurt
  • Juice of 1 lemon
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

*For the Tacos:*

  •  8 small tortillas (corn or flour)           
  •  1 cup shredded lettuce
  •  1 cup diced tomatoes
  •  1/2 cup diced red onion
  •  1/4 cup chopped fresh cilantro
  •  Lime wedges for serving
  •  Optional toppings: avocado slices, vegan sour cream, hot sauce


**Instructions:**

  1. Preheat the Oven:

    • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the Cauliflower and Chickpeas:

    • In a large bowl, toss the cauliflower florets and chickpeas with olive oil, taco seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Bake to Crispy Perfection:

    • Spread the seasoned cauliflower and chickpeas in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and crispy, and the chickpeas are slightly crunchy.
  4. Prepare the Zesty Yogurt-Lemon Sauce:

    • In a small bowl, whisk together vegan mayo, vegan yogurt, lemon juice, chopped fresh cilantro, garlic powder, onion powder, salt, and pepper until smooth and well combined. Adjust seasoning to taste.
  5. Assemble the Tacos:

    • Warm the tortillas according to package instructions. Fill each tortilla with a generous portion of the crispy cauliflower and chickpeas. Top with shredded lettuce, diced tomatoes, diced red onion, and fresh cilantro.
