                                                                    **Cook Time: Approximately 25-30 minutes**

**Ingredients**:

  • 1 block of extra-firm tofu, pressed and crumbled
  • 1 cup walnuts, finely chopped
  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons nutritional yeast (optional, for added umami)
  • 2 tablespoons olive oil for cooking

**Instructions**:

  1. Prepare the Tofu:

    • Press the tofu to remove excess water. Crumble it into small pieces using your hands or a fork.
  2. Toast the Walnuts:

    • In a dry skillet over medium heat, toast the chopped walnuts until they become fragrant and slightly golden. Stir frequently to prevent burning. This should take about 3-5 minutes.  Once done, place to the side in a separate bowl.
  3. Cook the Onion and Garlic:

    • In the same skillet, heat olive oil over medium heat. Add the finely chopped onion and cook until translucent, about 3-5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Prepare the Tofu Walnut Mixture:

    • Add the crumbled tofu and toasted walnuts to the skillet. Mix well with the onions and garlic.
  5. Season the "Meat":

    • Incorporate soy sauce, tomato paste, smoked paprika, cumin, chili powder, dried oregano, salt, black pepper, and nutritional yeast (if using). Stir to combine, ensuring the flavors are well distributed.
  6. Cook to Perfection:

    • Continue cooking the mixture over medium heat for 10-15 minutes, or until the tofu and walnuts are nicely browned and the flavors have melded together. Stir occasionally to prevent sticking.
  7. Adjust Seasoning:

    • Taste and adjust the seasoning according to your preferences. Add more soy sauce, salt, or spices as needed.
  8. Serve and Enjoy:

    • Use the Vegan Tofu Walnut Ground "Meat" in your favorite dishes such as tacos, burritos, pasta, or salads. Get creative and explore different culinary possibilities!
