Irresistible Vegan Nachos Recipe for Guilt-Free Indulgence

Packed with flavor and goodness, these nachos are perfect for parties, movie nights, or just a cozy evening at home. These Vegan Nachos are not only a treat for your taste buds but also a healthier alternative to the traditional version. So gather your friends and family and indulge in this satisfying snack that's sure to be a hit! Let's dive into the recipe:

        Cook Time:** Approximately 20 minutes (including tofu meat and cheese sauce preparation)


**Ingredients:**

- 1 bag of your favorite tortilla chips (about 10-12 ounces)
- 1 cup of vegan cheese shreds (cheddar or mozzarella) or vegan cheese sauce (*see below)
- 1 cup of black beans, cooked and drained
-1  cup of corn, cooked and drained
-1-2 cups of vegan tofu meat (store brought or homemade). (*see separate post on how to make tofu meat)
- 1 cup of diced tomatoes
-1/2 cup of diced red onion
- 1/4 cup of chopped fresh cilantro
- 1 avocado, diced or guacamole
- 1 lime, cut into wedges


**For the Vegan Cheese Sauce:**

- 1 cup of raw cashews, soaked for 2 hours and drained
- 1/4 cup of nutritional yeast
- 1 tablespoon of lemon juice
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of turmeric (for color)
- 1 cup of water
- Salt and pepper to taste

**Instructions:**

1. Preheat your oven to 375°F (190°C).

2. Next, prepare the cheese sauce if you are not using vegan cheese shreds.  

3. In a food processor, combine all the ingredients for the vegan cheese sauce - soaked cashews, nutritional yeast, lemon juice, garlic powder, onion powder, turmeric, water, salt, and pepper. Blend until smooth and creamy.  Then set aside and begin to assembling your nachos.

4. Arrange the tortilla chips on a large baking sheet in an even layer.

5. Evenly distribute the cooked black beans, corn and tofu meat, over the chips.

6. Drizzle the vegan cheese sauce over the tortilla chips. Make sure to distribute it evenly to cover most of the chips.  If using vegan cheese shreds, sprinkle the vegan cheese shreds over the chips.

7.  Bake the nachos in the preheated oven for about 5-10 minutes, until warm or until the cheese is melted if using cheese shreds.

8. Once out of the oven, top the nachos with diced tomatoes, red onion, and chopped cilantro. (Use whatever toppings you prefer).

9. Garnish with diced avocado or guac and a squeeze of lime juice for an extra burst of freshness.

10. Serve immediately and enjoy your delectable batch of vegan nachos!
