Vegan Grilled Cheese with Caramelized Onions, Mushrooms & Plant-Based Gouda

Ingredients (Makes 2 sandwiches)

For the Sandwich:

  • 4 slices sourdough bread (or your favorite bread)

  • 4 slices plant-based Gouda cheese

  • 1 tbsp vegan butter (for grilling)

  • 1 tbsp Dijon mustard (optional, for added flavor)

For the Caramelized Onions & Mushrooms:

  • 1 small yellow onion, thinly sliced

  • ½ cup mushrooms, thinly sliced (button, cremini, or portobello)

  • 1 tbsp olive oil

  • 1 tsp balsamic vinegar (for depth of flavor)

  • ½ tsp maple syrup (optional, enhances caramelization)

  • ¼ tsp salt

  • ¼ tsp black pepper


Instructions

Step 1: Caramelize the Onions & Mushrooms

  1. Heat olive oil in a pan over medium-low heat.

  2. Add the sliced onions and salt, stirring occasionally. Cook for 10-15 minutes, until onions become golden and soft.

  3. Stir in the mushrooms, balsamic vinegar, maple syrup, and black pepper. Cook for another 5 minutes, until mushrooms soften and everything is caramelized. Remove from heat and set aside.

Step 2: Assemble the Sandwich

  1. Spread Dijon mustard (if using) on one side of each bread slice.

  2. Layer 1 slice of vegan Gouda cheese on each piece of bread.

  3. Spoon the caramelized onion and mushroom mixture over the cheese.

  4. Top with another slice of Gouda and place the second piece of bread on top.

Step 3: Grill the Sandwich

  1. Heat a pan over medium heat and add vegan butter.

  2. Place the sandwich in the pan and cook for 3-4 minutes per side, pressing down gently with a spatula.

  3. Flip and cook until the bread is golden brown and the cheese is melty.

Step 4: Serve & Enjoy!
