Vegan Pizza Rolls: A Fun Twist on a Classic

Who says pizza has to be round and flat? If you’re like me, you love playing with food in a way that’s fun, easy, and, of course, delicious. That’s where these vegan pizza rolls come in! Made with ready-made crescent rolls (because who has time to make dough from scratch every night?), these bite-sized pizza rolls are stuffed with a colorful blend of red and green peppers, onions, mushrooms, zucchini, and gooey vegan cheese. They’re perfect for a snack, a light meal, or sharing with friends—because let’s face it, these are too good to keep to yourself!

***Ingredients:***

- 1 can ready-made crescent rolls (vegan-friendly)

- ½ cup red bell pepper, diced

- ½ cup green bell pepper, diced

- ½ small onion, finely chopped

- ½ small zucchini, finely chopped

- ½ cup vegan cheese (shredded)

- ¼ cup pasta sauce (or your favorite marinara sauce) for the base

 - ¼ cup mushroom, finely chopped

-  1 tsp dried oregano

-  1 tsp dried basil

 - Extra pasta sauce for dipping (optional)


***Instructions:***


1. **Preheat your oven** to 375°F (190°C).

   

2. **Prepare the Filling:**

   - In a small bowl, mix together the diced red and green peppers, chopped onions, mushrooms and zucchini. Set aside.


3. **Assemble the Pizza Rolls:**

   - Roll out the crescent roll dough into triangles.

   - Spread a small spoonful of pasta sauce onto each triangle, leaving a bit of space around the edges.

    - Sprinkle oregano and basil over the sauce.

   - Add a spoonful of the pepper, onion, mushrooms and zucchini mixture onto each triangle, then sprinkle with vegan cheese.


4. **Roll It Up:**

   - Carefully roll each crescent roll from the wide end to the tip, making sure to tuck in the ingredients as you go.

   - Place the rolled pizza crescents onto a lined baking sheet.

   - Brush the tops lightly with olive oil and sprinkle a bit more oregano and basil on top for an extra burst of flavor.

 

5. **Bake:**

   - Bake the pizza rolls in the preheated oven for 10-12 minutes or until golden brown and crispy.


6. **Serve:**

   - Serve hot with extra pasta sauce for dipping on the side if desired.
